to rescue or save something that is vitally important (such as one's life, reputation or livelihood) from loss, injury or damage; to escape from hazard or crisis; to avoid injury or death. This is possibly an allusion to the care formerly needed to save the bacon which had been stored for winter use from the dogs of the household.
